Animal Reception & Ante-Mortem
Cattle undergo mandatory ante-mortem inspection by registered INAC/MGAP veterinary inspectors. Animals are allowed a rest period to reduce stress. Only animals cleared through full veterinary health assessment proceed to slaughter.
Slaughter Line
Designed and operated in strict compliance with INAC and MGAP regulations. Humane stunning protocols before slaughter. Equipped for both conventional and Halal-certified slaughter. Kosher slaughter performed under certified mashgichim supervision.
Carcass Processing & Deboning
Post-mortem inspected carcasses move through a controlled-temperature environment. Skilled butchers carry out primary and secondary deboning to buyer specifications. Deboning rooms operate at regulated low temperatures to maintain product integrity.
Cold Chain & Refrigeration
Unbroken cold chain from slaughter to refrigerated container loading. Dedicated chilling rooms, aging chambers, and blast freezing tunnels. Temperatures monitored continuously via automated systems with audit-ready records.
Vacuum Packing & Labeling
Products vacuum-packed in food-grade EVOH or PA/PE barrier film. Each package labeled with product name, lot number, weight, production date, use-by date, country of origin, and applicable certification marks.
Container Loading & Management
Reefer containers are pre-cooled before loading. Temperature recorders fitted to containers for buyer data on ocean transit. Container loading conducted on-site under customs supervision to maintain cold chain integrity.
Continuous On-Site Official Veterinary Inspection
The facility operates under continuous on-site supervision of INAC-designated official veterinary inspectors. All products intended for export must pass inspection and receive official health certificates before being cleared for shipment — a core component of Uruguay’s internationally respected meat inspection system.

Frigorifico Sirsil SA operates a purpose-built beef processing facility in the Montevideo metropolitan area, situated close to the Port of Montevideo — Uruguay’s primary beef export gateway. The facility is designed end-to-end for international export compliance: from the dedicated animal reception and ante-mortem inspection areas at intake through to container loading bays with direct reefer access at dispatch.
Every zone of the facility has been built and maintained to meet the requirements of the world’s most demanding beef import authorities simultaneously — USDA-FSIS, EU veterinary import requirements, GACC (China), and Halal and Kosher certification bodies. This multi-standard compliance is the result of deliberate investment in infrastructure, staffing, and process design over many years of export operation.
Unlike many facilities approved for a single export market, Sirsil SA operates under a unified food safety system that satisfies the USA, EU, China, Middle East, and Jewish market requirements concurrently — enabling buyers from multiple markets to source from the same facility with full confidence.
Facility Capabilities at a Glance
Cold Chain & Logistics
Temperature integrity is maintained from the moment of slaughter through to container sealing. Carcasses enter refrigerated chill rooms within minutes of slaughter, deboning and processing take place in temperature-controlled environments, and all product is blast-frozen or maintained at chill temperatures throughout packing, storage, and container loading.
Our proximity to the Port of Montevideo reduces transit time between facility and vessel, minimising temperature excursion risk during landside logistics. Container loading is conducted in controlled conditions with direct access to reefer-equipped loading bays. Temperature data loggers are available on request for buyers with cold chain monitoring requirements.
Traceability Infrastructure
Every animal that enters our facility carries a unique SNIG electronic ID assigned at birth. Our processing system links each production lot to the SNIG records of every animal in that lot — capturing farm of origin, region, breed, owner, and birth date. In the event of a product query, we can identify the source animal and all associated records within minutes. Full traceability documentation is available to buyers and regulatory authorities on request for any shipment.
